4-Ingredient Jalapeno Calhoun Bites
Servings: 8
Prep time: 15 to 20 minutes
Cook time: 20 to 25 minutes
Rest time: 5 minutes
Total time: about 45 minutes
Ingredients:
4 fresh jalapenos
8 ounces cream cheese, softened
8 slices turkey bacon or regular bacon
1 cup shredded cheddar cheese or Mexican blend cheese
Equipment:
Small mixing bowl
Spoon or small scoop
Knife and cutting board
Baking sheet
Parchment paper or aluminum foil
Toothpicks, optional
Kitchen gloves, optional but recommended when handling jalapenos
Ingredient notes:
Choose firm, bright green jalapenos that are about 3 to 4 inches long. Smaller jalapenos tend to be milder, while larger ones can be hotter. If you want a very mild bite, remove all the seeds and white membranes. If you want more heat, leave some of the membranes in place. Soften the cream cheese at room temperature for about 20 to 30 minutes so it mixes smoothly with the shredded cheese. Turkey bacon works well and cooks faster, but regular bacon gives a richer flavor. If using regular bacon, you may need to precook it for 3 to 5 minutes so it finishes crisping at the same time as the filling heats through.
Preparation steps:
1. Preheat the oven to 400 degrees F. Move an oven rack to the middle position so the bites bake evenly.
2. Line a baking sheet with parchment paper or lightly greased aluminum foil. Parchment paper makes cleanup easier and helps prevent sticking.
3. Wash the jalapenos and pat them dry. Wear gloves if your skin is sensitive, and avoid touching your face after handling them.
4. Cut each jalapeno in half lengthwise, from stem to tip. Leave the stem on if you like, or remove it carefully. Leaving a small piece of stem can make the bite easier to hold.
5. Use a small spoon or your fingers to scoop out the seeds and white membranes. Discard them or compost them. For a milder version, remove all the seeds and membranes. For a hotter version, leave some seeds in place.
6. In a small mixing bowl, combine the softened cream cheese and the shredded cheese. Stir until the mixture is smooth, evenly blended, and easy to spoon. If the mixture seems stiff, let it sit for a few more minutes at room temperature.
7. Spoon the cheese mixture into each jalapeno half. Fill each half generously but do not mound it so high that it spills over during baking. A small cookie scoop or two spoons work well for this step.
8. Cut each bacon slice in half crosswise if the slices are long. Wrap one half slice of bacon around each filled jalapeno. Start at one end and wrap toward the other, covering as much of the filling as possible. If the bacon unwraps, secure it with a toothpick.
9. Arrange the wrapped jalapenos on the prepared baking sheet with a little space between them. This allows the bacon to crisp and the filling to heat evenly.
10. Bake for 20 to 25 minutes, until the bacon is crispy and browned at the edges and the cheese filling is hot and bubbly. Check after 15 minutes because oven temperatures and bacon thickness vary. If the bacon is browning too quickly, tent the pan loosely with foil and continue baking.
11. Remove the pan from the oven and let the bites rest for 5 minutes. The filling will be very hot, so this rest time is important. Remove toothpicks before serving and remind guests that toothpicks were used if you leave them in.
12. Serve warm. These bites are best enjoyed fresh from the oven, but they can be held warm on a serving tray for a short time.
Make-ahead instructions:
You can assemble the bites up to 24 hours ahead. Fill and wrap the jalapenos, place them in a single layer in a covered container, and refrigerate them. Bake them directly from the refrigerator, adding 3 to 5 minutes to the baking time. You can also freeze assembled, unbaked bites for up to 2 months. Freeze them on a tray first, then transfer to a freezer bag. Bake from frozen on a lined baking sheet at 400 degrees F, adding about 8 to 10 minutes to the usual baking time, and check often.
Storage and reheating:
Store leftover bites in an airtight container in the refrigerator for up to 3 days. Reheat in a 350 degrees F oven for 8 to 10 minutes, or in an air fryer at 350 degrees F for 4 to 6 minutes, until hot and crisp again. Microwaving works but will soften the bacon.
Serving ideas:
Serve these bites as an appetizer with ranch dressing, sour cream, or a fresh salsa for dipping. They also work as a game-day snack, party tray addition, or low-carb lunch item with a simple green salad. For a milder party version, use mini sweet peppers instead of jalapenos, though that changes the heat level.
Troubleshooting:
If the filling leaks out during baking, you likely overfilled the jalapeno halves. Fill them only to the top edge next time.
If the bacon is not crispy, bake a few minutes longer or use a wire rack set inside the baking sheet so air circulates underneath.
If the bites are too hot, remove all seeds and membranes and choose smaller jalapenos.
If the cheese mixture is too thick, let the cream cheese soften longer before mixing.
If the bacon unwraps, secure it with toothpicks before baking and remove them after the rest period.
Variations while keeping four main ingredients:
Use regular bacon instead of turkey bacon for a richer flavor.
Use mozzarella or Monterey Jack instead of cheddar for a milder, stretchier filling.
Use mini sweet peppers instead of jalapenos for a no-heat version.
Add a little garlic powder or onion powder to the cheese mixture if you allow pantry seasonings in addition to the four main ingredients.
