Chicken Charleston is a classic, old-fashioned dish that lives up to its reputation for being incredibly simple yet deeply flavorful. It requires just three main ingredients and one baking dish, making it a perfect hands-off dinner.

🥘 3-Ingredient Chicken Charleston Recipe

This recipe is incredibly flexible, but the core method remains the same. Here’s a standard version you can follow.

Ingredients

6 bone-in, skin-on chicken thighs: These stay juicy and flavorful during the long bake.

1 large sweet onion (like Vidalia), sliced into rings.

1 cup Russian dressing: This acts as your built-in sauce and seasoning.

Instructions

1.  Preheat & Prep: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish or a similar casserole dish.

2.  Layer the Ingredients: Spread the sliced onion rings evenly across the bottom of the dish. Pat the chicken thighs dry and arrange them in a single layer on top of the onions, skin-side up.

3.  Add the Sauce: Spoon the Russian dressing evenly over each piece of chicken, making sure they are well coated.

4.  Bake: There are two common methods for baking, both yield excellent results:

Covered Method: Cover the dish tightly with foil and bake for 45 minutes. Then, remove the foil, spoon some of the pan sauce over the chicken, and bake for another 25 to 35 minutes until the chicken is cooked through and the onions are caramelized.

Uncovered Method: Bake the dish uncovered for 45 to 55 minutes, depending on the size of your thighs, until the chicken is cooked through and the sauce has reduced and glazed the chicken.

5.  Check for Doneness: Regardless of the method, the chicken is done when it reaches an internal temperature of 165°F (74°C) at the thickest part, away from the bone.

6.  Rest & Serve: Let the dish rest for about 5 minutes. Spoon the soft onions and rich pan sauce over each piece of chicken before serving.

 Tips & Variations

The Magic of the Sauce: The Russian dressing combines with the chicken juices and onion sweetness to create a rich, tangy, and slightly sweet pan sauce. It's the star of the dish and perfect for spooning over rice, mashed potatoes, or egg noodles.

Ingredient Swaps:

Chicken: Boneless thighs or chicken breasts can be used, but they may cook faster and dry out more easily, so start checking for doneness earlier.

Onion: A regular yellow onion works well if you don't have a sweet one, though the final dish will be slightly less sweet.

Dressing: Catalina-style dressing is a common substitute for Russian dressing, offering a slightly sweeter and more tomato-forward flavor.

Easy Add-ins: A light sprinkle of black pepper, garlic powder, or paprika over the chicken before baking can add extra depth without complicating the recipe.

This dish is a perfect example of how a few simple ingredients can create a meal that feels both comforting and effortlessly impressive.
